Banana Chocolate Chip Energy Bites

Recipes

A healthy and yummy treat full of protein and sweetened with maple syrup!

Ingredients

  • 1 1/4 cups rolled oats

  • 1/4 cup ground flaxseed

  • 1 tablespoon chia seeds

  • 1/3 cup Jelliff’s Maple Syrup

  • 1/4 cup Almond Butter

  • 1 ripe Banana, mashed

  • 1 teaspoon pure vanilla extract

  • 1 teaspoon cinnamon

  • 1/4 cup semi-sweet chocolate chips ( I use mini chips)

Instructions

  1. In a large bowl mix together all ingredients.  Cover and refrigerate overnight.  The batter will be wet but will firm up as it sits.
  2. Form into approximately 20 bite sized balls.  It helps to have your hands wet when rolling into balls.
  3. Refrigerate energy bites 2-3 hours overnight, the bites will continue to firm up. Enjoy for breakfast or as a quick snack. Can be frozen for up to 3 months. These tasty treats were a big hit when served at our first Open House.
